Vegetarian Moroccan Stew Recipe

4 small kohlrabis or parsnips, peeled and cut into chunks
1 large onion, chopped
2 sweet potatoes, peeled and cut into chunks
2 small zucchini, cut into chunks
5 fresh tomatoes cut into chunks or 16 ounces canned tomatoes
15 ounce can garbanzo beans with liquid
1/2 cup couscous
1/4 cup raisins
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/4 teaspoon ground cumin
3 cups water

Combine all ingredients into a large pot. Bring to a boil and then lower heat to simmer for 30 minutes or until vegetables are tender.
