Italian "Meatballs" Recipe

12 ounces pre-browned vegetable protein crumbles
2 eggs, lightly beaten
1/4 cup Italian breadcrumbs
2 cloves garlic, minced
2 tablespoons grated fat-free Parmesan cheese
2 teaspoons Italian herbs
1/2 teaspoon crushed fennel seeds

Combine all ingredients and mix well. From mixture into 24 balls. Place meatballs on a baking sheet sprayed with nonstick cooking spray and bake at 350 degrees until firm, about 10 minutes. Can be added to tomato sauce and used for meatball sandwiches or with pasta.
