Old Fashioned Bean Soup Recipe
1 pound dry white beans
3 quarts water
Smoked ham hocks or meaty ham bone
1 tablespoon minced onion
1/2 teaspoon celery salt
1/2 teaspoon dry mustard
2 teaspoons salt
Dash pepper
Wash beans and soak overnight in water. Do not drain. Add ham, onion and celery salt. Cook until beans are very soft, 2-3 hours. Remove ham and cool. Remove meat from ham hocks or bone and chop into bite-sized pieces. Slightly mash beans with a slotted spoon. Add meat, mustard, salt and pepper and reheat. Garnish with parsley if desired and serve.
