Mashed Potatoes with Artichoke Hearts Recipe

4 large baking potatoes, peeled and quartered
1 can artichoke hearts, not marinated
3 tablespoons unsalted margarine
1/4 cup milk
Salt and pepper to taste

Boil potatoes for 15-20 minutes or until potatoes are fork-tender. Drain. Puree artichoke hearts with half of the margarine and milk. Add potatoes and remaining margarine and mix and blend until smooth. Salt and pepper to taste.
