Roasted Honey-Mustard Potatoes Recipe

4 large baking potatoes
1/2 cup Dijon mustard
1/4 cup honey
1/2 teaspoon crushed dried thyme
Salt and pepper to taste

Peel potatoes and slice each into 6-8 pieces. Cover potatoes with salted water in a large saucepan. Bring to a boil over medium-high heat. Cook potatoes 12-15 minutes or until tender. Drain potatoes and allow to cool. Combine mustard, honey and thyme in a small bowl. Toss potatoes with honey-mustard mixture until evenly coated. Arrange potatoes on a foil-lined baking sheet coated with nonstick cooking spray. Bake at 375 degrees for 20 minutes or until potatoes begin to brown. Season with salt and pepper to taste
