Carrot-Radish Salad Recipe

8 medium carrots, shredded
12 large radishes, julienne cut
½ teaspoon lime zest
3 tablespoons lime juice
1 ½ tablespoons olive oil

Combine carrots and radishes and toss well. Whisk together lime zest, lime juice and oil and add salt and pepper to taste. Pour dressing mixture over carrots and radishes and toss to coat.
