Wild Rice and Mushroom Stuffing Recipe
1 cup wild rice
4 cups water
1 tablespoon olive oil
1/2 cup onion, minced
1/2 cup chopped celery
1 teaspoon garlic, minced
2 cups sliced mushrooms
2 tablespoons parsley, minced
1/4 cup honey
In a small saucepan, combine wild rice and water and bring to boil. Cover, reduce heat and simmer until tender, approx. 45 minutes. Heat oil in skillet, over medium heat. Saute onions, celery and garlic until soft, about 7 minutes. Add mushrooms and saute until soft, approx. 3 minutes. Remove from heat. Drain rice in colander to remove excess water. Combine rice and mushroom mixture with parsley and honey. Stir well to mix and serve as a side dish or use to stuff poultry.
