Creamy Cheddar Bake Recipe

1 pound French bread, cut into 1/2 inch slices
2 cups (8 ounces) reduced fat cheddar cheese, shredded
1 cup egg substitute
1 quart nonfat milk
1teaspoon onion, finely chopped
1/2 teaspoon Dijon style mustard
1/2 teaspoon salt
Paprika

Spray 13x9 inch oven safe dish with nonstick cooking spray. Place half the bread slices in the bottom of dish (overlaps if necessary) and sprinkle with 1 1/4 cups cheese. Wisk egg substitute, milk, onion, mustard and salt until well blended. Pour evenly over bread and cheese. Cover with the remaining cheese and sprinkle with paprika. Cover and refrigerate at least 1 hour (or overnight).

Preheat oven to 350 F. Bake about 45 minutes or until cheese is melted and bread is browned. Let stand for 5 minutes and garnish with minced fresh parsley.
