Vegetable Pitas Recipe

1 cup sliced broccoli
1 cup sliced cauliflower
1 cup sliced celery
1/2 cup sliced carrots
1 cup sliced mushrooms
1 medium red onion, sliced and separated into rings
1/4 teaspoon dried savory
4 large pita breads
1/2 cup reduced fat cheddar cheese

Add broccoli, cauliflower, celery and carrots to boiling water and boil for 2 minutes. Drain vegetables and return to pot. Stir in mushrooms, onion and savory and mix well. Divide the vegetable mixture evenly between the pita halves and sprinkle with cheese. Cover pita halves with aluminum foil and bake at 350 degrees for 5-10 minutes.

You can also omit the savory and stir-fry the vegetables in your favorite sauce for a different flavor.
