Mix-and-Match Wraps Recipe

This recipe is from the American Institute for Cancer Research and is used by permission.

1/2 zucchini or cucumber, peeled, seeded and cut into matchstick pieces
1/2 carrot sliced into slivers
1/2 bell pepper (either red or yellow) seeded and thinly sliced
1/2 cup fresh mushrooms, thinly sliced
1/2 cup seasoned rice vinegar
1 cup packed spinach leaves
2 whole wheat flour tortillas
1/2 cup hummus or reduced fat cream cheese
3 ounces sliced turkey or chicken breast

Combine zucchini or cucumber, carrot, bell pepper, mushrooms and rice vinegar and toss to coat. Marinate vegetables for a least 2 hours or overnight (should be refrigerated if marinated overnight).

Drain marinade and discard. Warm tortillas in the microwave for a few minutes so they will roll easily. Spread each tortilla with half of the hummus or cream cheese. Divide the spinach leaves and the sliced deli meat and place on top of each tortilla. Divide the marinated vegetables between each tortilla. Wrap each tortilla and microwave briefly before serving.
