Garden Salad with Flaked Salmon Recipe

1 (14 3/4 ounce) can salmon, drained and flaked
1 red onion, thinly sliced
3 tomatoes, seeded and diced
1 1/2 red pepper, seeded, roasted and chopped
6 cups dark green lettuce
1/2 cup fresh basil, shredded
1 carrot, shredded
1 stalk celery, chopped
3/4 cup fat free Italian salad dressing
3/4 cup fat free mozzarella cheese
4 tablespoons Dijon-style mustard
1 teaspoon balsamic vinegar
Salt and pepper to taste

Combine onion, tomato, red pepper, salad greens, basil, carrot and celery and toss well. In a small bowl, combine salad dressing, mustard and vinegar and mix well. Add salmon and dressing and toss to coat. Top with cheese and serve.
