Tina's Vegetarian Casserole Recipe

1 pound cooked lentils
3/4 cup honey
1/2 cup low sodium soy sauce
2 teaspoons dry mustard
1 teaspoon pepper
1/2 teaspoon ground ginger
1/2 cup chopped onion
1/2 cup sliced carrot
1/2 cup sliced celery
3 tablespoons olive oil
8 cups cooked white rice

Place lentils in 2-1/2 quart casserole dish. Combine honey, soy sauce, mustard, pepper and ginger in small bowl. Add this mixture to the lentils and stir. Heat oil in a small skillet over medium-high heat. Add onion, carrot and celery and cook until onion is tender. Add to lentils and mix well; cover and bake at 350 degrees for 45 minutes. Uncover and bake another 15 minutes. Serve over rice.
