Tofu Tacos Recipe
1 pound firm tofu, tempeh or TSP*, drained and crumbled
1 teaspoon olive oil
2 teaspoons minced onion
1 teaspoon chili powder
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon minced garlic
1/2 teaspoon ground cumin
1/2 cup water
8 corn tortillas, warmed
1 can vegetarian refried beans, heated
In a large nonstick skillet, heat oil over medium heat. Crumble tofu into skillet and cook over medium heat for about 10 minutes. Add spices, water and salt and pepper to taste. Cook until sauce thickens. To serve, spread refried beans on tortillas, add tofu and garnish with tomatoes, lettuce, green onions, cheese and salsa.
*Tempeh and TSP (textured soy protein) are available in health food and specialty stores. It's texture is drier (more like ground beef) and can be a great substitute for any recipe requiring ground beef. It's worth finding it and experimenting with it!
