Spicy Bean-Vegetable Tacos Recipe

1 medium onion
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
Dash pepper
1 (19 ounce) can beans in sauce
3 drops Tabasco
12 corn tortillas
1 cup sliced mushrooms
1 cup reduced fat cheddar cheese, grated
2 tomatoes, cored and diced
Romaine or green leaf lettuce

Spray a nonstick skillet with cooking spray and saute onion over medium heat until soft. Stir in garlic powder, cumin and pepper and cook another 2 minutes. Add beans and Tabasco sauce and simmer uncovered for 10 minutes, stirring frequently.

Lightly spray flour tortillas with nonstick cooking spray. Hang tortillas over racks in oven and bake at 350 degrees for 4-6 minutes or until crisp. Divide bean mixture into tortillas, top with mushrooms, cheese, tomatoes and lettuce and serve.
