Mini Pizzas with Feta Cheese Recipe

3 small Italian squash, thinly sliced
1/2 medium red onion, thinly sliced
2 carrots, grated
1 tablespoon olive oil
3 sandwich size English muffins, split and toasted
1 (14-ounce) jar commercially prepared pizza sauce
2 tablespoons feta cheese, crumbled

Preheat broiler. In a large skillet sauté vegetables in olive oil until crisp-tender. Top each toasted muffin with 2 tablespoons pizza sauce, sautéed vegetables and cheese. Broil 6 inches from heat for 10-15 minutes or until cheese melts.
