Herbed Millet and Tofu Recipe

1 cup raw millet
2 cups water
1 pound firm tofu
2 cups chopped spinach
1 small onion, minced
2 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon basil or 1/4 teaspoon dried basil
1/2 teaspoon tarragon or 1/4 teaspoon dried tarragon
1 tablespoon parsley or 2 teaspoons dried parsley flakes

Saute minced onion and garlic and a small amount of olive oil in a saucepan. Add herbs and then millet and saute briefly. Add water and bring to a simmer. Simmer uncovered for 25 minutes. Add tofu and spinach and simmer 5 more minutes.
