Roasted Red Pepper Pasta Recipe
1 (28 ounce) low calorie prepared "chunky" tomato sauce
1 large red bell pepper, sliced
1 tablespoon fresh parsley, minced
1/4 teaspoon crushed red pepper flakes
6 cups cooked rotini pasta (approx. 3 cups uncooked pasta)
2 tablespoons grated Parmesan cheese
Place sliced red peppers on foil lined broiler pan and spray with cooking spray. Broil about 5 minutes, remove from heat and cool. In a medium saucepan add tomato sauce and red pepper flakes and simmer over low heat, stirring occasionally. Chop peppers and add to sauce. Spoon sauce over cooked pasta and toss well to coat. Sprinkle with Parmesan cheese and serve.
