Pasta with Marinated Tomatoes Recipe
2 cups chopped tomatoes
2 green onions, chopped
2 cloves garlic, finely chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon salt
2 teaspoons fresh basil, chopped or 1/2 teaspoon dried basil
1/8 teaspoon cracked pepper
2 tablespoons olive oil
Fresh Parmesan cheese
1 (7 ounce) package uncooked rotini pasta
Mix all ingredients except pasta. Cover and refrigerate at least 2 hours. Prepare pasta according to directions, drain and toss with tomato mixture. Sprinkle with fresh Parmesan cheese.
