Chicken Putanesca Recipe
3 cloves garlic, minced
1 jar (approx. 26 ounces) fat free or reduced fat pasta sauce
1/2 cup sliced ripe olives
1/4 cup dry white wine or reduced sodium chicken broth
1 tablespoon capers
1/2 teaspoon crushed red pepper
2 cups chopped cooked chicken breast
8 cups cooked spaghetti
Grated Parmesan cheese
Spray a medium saucepan with nonstick cooking spray and heat over medium heat until hot. Add garlic and cook for 1 minute. Stir in pasta sauce, olives, wine, capers and red pepper and heat to boil. Reduce heat and simmer for 10 minutes uncovered. Stir in chicken and heat through. Follow package directions for pasta and drain. Toss sauce and pasta and sprinkle with cheese.
