Salmon-Dill Loaf Recipe

1 (15 ounce) can salmon
2 cups soft breadcrumbs
1/3 cup finely minced onion
1/4 cup skim milk
1/2 cup egg substitute
2 tablespoons chopped parsley
1 tablespoon lemon juice
1/4 teaspoon dill
1 dash black pepper

Drain and flake salmon, reserving 2 tablespoons liquid. Combine flaked salmon, reserved liquid and remaining ingredients and mix well. Place in a loaf pan or shape into a loaf on a baking dish sprayed with nonstick cooking spray. Bake at 350 degrees for 45 minutes.

Salmon (and other fresh water fish) or slightly higher in fat than other fish, but they also contain higher amounts of heart-protecting omega-3 fatty acids.
