Salmon with Cucumber Relish Recipe

2 pounds salmon fillet
2 tablespoons olive oil
1/4 teaspoon dried dill weed
1/2 teaspoon salt
1/4 teaspoon pepper

Cucumber relish:
1 medium cucumber, seeded and coarsely chopped
2 tablespoons onion, chopped
2 tablespoons with vinegar
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons fresh parsley, chopped

Mix all Cucumber Relish ingredients together, cover and refrigerate at least 1 hour. Heat coals or gas grill. Place fish on a large piece of foil, brush with oil and sprinkle with dill weed and salt and pepper. Wrap foil tightly around fish and grill over medium heat for 20-30 minutes or until fish flakes easily with a fork. Serve fish with relish.
