Orange Roughy with Wine-Dill Marinade Recipe
4 (4 ounce) orange roughy filet
1 cup of dry white wine
1 teaspoon dried dill or 1 tablespoon chopped fresh dill
Salt and pepper to taste
Place the orange roughy in a microwave safe, shallow casserole dish. Pour wine over and sprinkle well with dill. Sprinkle with salt and pepper if desired. Cover and marinade in refrigerator for 30 minutes, turing occasionally. Remove most of the wine and cover with plastic wrap leaving one corner open to vent. Cook in the microwave on high for about 4 minutes, or until fish begins to flake easily with a fork.
