Orange Salmon Recipe
2 oranges
4 (4 ounce) salmon filets
1 teaspoon red wine vinegar
1/4 cup sliced green onions
Salt and cracked black pepper
Peel oranges and remove white membrane. Slice crosswise into 1/4-inch rounds. Season salmon filets with salt and broil 4-6 inches from heat and allow 10 minutes per inch of thickness. Remove from oven before they are completely done. Sprinkle with vinegar and arrange oranges on top of fish. Sprinkle with green onions and cracked pepper and broil 1-minute longer.
