Poached Cod with Lemon Butter Recipe
6 (4 ounce) cod filets
1 quart water
1/4 cup lemon juice
1 small onion
1 bay leaf
4 peppercorn
4 whole cloves
1 teaspoon salt
Lemon Butter Sauce:
1/4 cup reduced fat margarine
2 tablespoons lemon juice
Minced parsley
Combine water, lemon juice, onion and seasoning in a large nonstick skillet. Bring to boil and simmer for 20 minutes. Add cod and simmer covered for 5-10 minutes or until fish flakes easily with fork. Remove cod and garnish with parsley. Melt margarine; add lemon juice and pour sauce over fish.
