Oven Baked Fish and Chips Recipe
1 cup Cornflakes, crushed
2 tablespoons Parmesan cheese
1/8 teaspoon cayenne pepper
1 egg
1 tablespoon skim milk
1/3 cup flour
4 (4 ounce) fish fillets
Salt and black pepper
Oven-Baked french-fries:
4 baking potatoes, cut into wedges
Seasonings and dry breadcrumbs
Combine Cornflakes, Parmesan cheese and cayenne pepper in a shallow dish. Whisk egg and milk together in another shallow dish. Spread flour in another shallow dish. Season each fish fillet with salt and pepper. Dredge in flour and shake off excess. Dip each fillet in the milk mixture, then coat with Cornflakes mixture. Place fish fillets on baking sheet sprayed with nonstick cooking spray and bake at 450 degrees for 10 minutes per 1 inch of thickness or until flakes easily with fork.
Place favorite seasonings and breadcrumbs into a large resealable bag. Place potato wedges into bag, seal and shake to coat. Arrange potatoes in a single layer on a baking sheet sprayed with nonstick cooking spray and bake until crispy, about 10 minutes. Serve with tartar or cocktail sauce.
