Rosemary Pork Roast Recipe

2 1/2 pounds pork loin roast
2 tablespoons fresh rosemary leaves, chopped
4 cloves garlic, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon margarine or butter
1 small onion, chopped

Heat oven to 350 degrees. Trim fat from pork roast. Mix rosemary and garlic. Make 8-10 cuts about 2 inches apart on top of roast. Insert small amounts of garlic mixture into cuts. Sprinkle with salt and pepper. Melt margarine in shallow roasting pan in oven and sprinkle with onion. Place pork in pan and insert meat thermometer so that tip is in the thickest part of roast and doesn’t touch fat. Roast 2 uncovered 1 3/4-2 hours or until thermometer reads 160 degrees. Let stand 15 minutes before slicing.
