Pork Chops with Berry Puree Recipe

4 pork loin chops, trimmed of excess fat
1 tablespoon olive oil
1/4 cup berry preserves (strawberry, raspberry, etc.)
1 tablespoon mustard
1/4 cup cider vinegar

Pat pork chops dry with paper towels. Heat oil in a nonstick skillet over medium heat until hot. Add pork chops and brown on both sides, about 2 minutes per side. Add remaining ingredients and mix well. Cover and simmer for 10 minutes or until sauce has thickened. Spoon glaze over pork chops and serve.
