Pork Chops with Glazed Apples Recipe

6 pork loin chops, 1 to 1/2 inch thickness
2 teaspoons olive oil
2 cups apple cider or apple juice
1/3 cup German-style mustard (dark and grainy)
3 apples, unpeeled and thinly sliced
1/2 cup currants or raisins
1/2 cup sliced green onions
2 tablespoons cornstarch
1/4 cup water

Heat oil in a large nonstick skillet over medium heat. Add pork chops and brown over medium-high heat for 2-3 minutes on each side. Season with salt and pepper. Combine apple cider and mustard and pour over pork. Cover and cook over medium heat for 45 minutes. Add apples, currants and green onions, cover and cook 5-10 minutes longer. Remove pork and apples from skillet, cover and keep warm. Combine cornstarch and water and gradually add to glaze and continue cooking until thickened. Serve sauce over pork and apples.
