Roasted Chicken and Potatoes Recipe
6 skinless boneless chicken breasts
1 pound small red potatoes, cut into quarters
1/3 cup fat-free mayonnaise
3 tablespoons Dijon mustard
1/2 teaspoon pepper
2 cloves garlic, crushed
Chopped fresh chives
Heat oven to 350 degrees. Spray a large baking dish with nonstick cooking spray. Place chicken and potatoes in baking dish and mix remaining ingredients except chives. Brush mayonnaise mixture over chicken and potatoes. Bake uncovered for 30-35 minutes or until chicken is no longer pink in center. Sprinkle with chives and serve.
