Parmesan-Dijon Chicken Recipe
6 skinless, boneless chicken breasts
1/4 cup margarine or butter, melted
3/4 cup dry breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons Dijon mustard
Heat oven to 375 degrees. Mix breadcrumbs and cheese in a large plastic bag. Stir the mustard into the margarine. Dip the chicken into the margarine mixture then place in the bag with the breadcrumb mixture and coat well. Place chicken in a shallow baking dish and bake uncovered for 20-30 minutes or until no longer pink in the center.
