Lemon Basil Chicken and Rice Recipe
4 boneless, skinless chicken breasts
1 teaspoon garlic powder
½ teaspoon lemon pepper
½ teaspoon dried basil
½ teaspoon margarine
1 ½ cups water
½ cup sliced mushrooms
1 teaspoon lemon juice
1 teaspoon lemon peel
½ cup uncooked rice
1 cup broccoli florets
Combine garlic powder, lemon pepper and dried basil and sprinkle over chicken breasts. Melt margarine in a large nonstick skillet over high heat. Add chicken breasts and sauté until just browned. Remove chicken from skillet and keep warm. Add water, mushrooms, lemon juice and peel and rice and bring to boil. Return chicken to the skillet, cover and simmer for 15 minutes. You can add water if the rice becomes too sticky. Add broccoli florets and continue cooking for 5 minutes or until all liquid is absorbed.
