Southwestern Skillet Quiche Recipe
1 medium onion, chopped
6 eggs*
1/2 cup skim milk
1/2 teaspoon chili powder
1/4 teaspoon dried oregano
1 (11 ounce) can whole kernel corn, drained
1/4 cup shredded cheddar cheese
1/2 cup salsa
* Egg substitutes can be used to lower fat and cholesterol.
Spray 10-inch skillet with nonstick cooking spray and cook onion over medium heat until tender. Beat eggs, milk, chili powder, and oregano until well mixed. Pour egg mixture over onion, stir in corn and sprinkle with cheese. Cover and cook over medium heat 9-11 minutes or until eggs are set and light brown on the bottom. Cut into wedges and serve with salsa.
