Indian-Style Pork with Raita Recipe
Raita is a creamy salsa-like condiment that goes great with pork and chicken.
4 boneless pork loin chops
1/2 teaspoon salt
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground turmeric
1/8 teaspoon cayenne pepper
1/8 teaspoon dry mustard
Raita:
2 teaspoons toasted cumin seeds
1 (8 ounce) can whole kernel corn, drained
1 small tomato, seeded and chopped
1 (8 ounce) container nonfat plain yogurt
1 teaspoon ground black pepper
1/2 teaspoon coriander
3 tablespoons chopped fresh cilantro
Chops: Combine the seasoning ingredients and mix well. Rub seasoning mixture into both sides of the pork chops. Cover and refrigerate for 30 minutes, then let stand at room temperature another 30 minutes. Grill chops or cook using a nonstick skillet for 6-8 minutes per side over medium-high heat. Serve chops with Raita.
Raita: Toast cumin seeds over a high heat, stirring frequently. Remove from heat and crush using a spoon. Stir in remaining ingredients and mix well. Cover and refrigerate at least 1 hour.
