Caribbean Chicken Recipe
6 skinless, boneless chicken breasts
Spicy Marinade:
4 medium green onions, sliced
2 jalapeno chilies, seeded and chopped
1/3 cup lemon juice
1/4 cup honey
2 tablespoons fresh thyme, chopped or 2 teaspoons dried thyme
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Mix all marinade ingredients together. Place chicken in a shallow glass dish or resealable plastic bag. Pour marinade over chicken and turn to coat. Cover and refrigerate at least 2 hours. Brush grill rack with olive oil and heat to medium heat. Remove chicken from marinade and place on grill. Cover and grill for 15-20 minutes or until no longer pink, turning and basting frequently. Discard any remaining marinade.
