Chinese Hot Noodles Recipe
2 cups spaghetti, uncooked
1 tablespoon peanut oil
1 small onion, finely diced
3 green onions, thinly sliced
2 teaspoons garlic, finely chopped
1 jalapeno, finely chopped without seeds
1 tablespoon curry powder
1 large tomato, coarsely diced
1 tablespoon soy sauce
1 cup shredded cabbage
1/2 cup shredded carrot
1/2 cup shredded zucchini
2 tablespoons honey
Lime wedges
Heat oil in a skillet over medium heat. Add the onion, green onion, garlic and jalapeno and sauté about 4 minutes. Stir in curry powder and mix in well. Add the tomato and soy sauce, reduce heat and cook till tomatoes are tender. Stir in the cabbage, carrot and zucchini and cook 3-5 minutes.
Drain the pasta and add the curry mixture while the pasta is still hot. Stir well to coat the pasta. Add honey and stir. Serve with lime wedges.
