Holiday Lebkuchen Recipe
Lebkuchen is a traditional holiday favorite in the Black Forrest Region of Germany.
1/2 cup honey
1/2 cup molasses
3/4 cup packed brown sugar
1 teaspoon grated lemon peel
1 tablespoon lemon juice
1 egg
2 3/4 cups all-purpose flour
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/3 cup citron, cut up (sugared lemon, usually found with baking products or dried fruits)
1/3 cup chopped nuts
Icing:
1 cup granulated sugar
1/2 cup water
1/4 cup powdered sugar
Heat honey and molasses to boiling in a small saucepan. Remove from heat and cool. Mix honey mixture, brown sugar, lemon peel, lemon juice, and egg in a large bowl. Stir in remaining ingredients, except icing ingredients, citron and nuts and mix well. Stir in citron and nuts, cover and refrigerate for at least 8 hours. Heat oven to 400 degrees and spray a baking sheet with nonstick cooking spray. Place 1/4-dough at a time on a lightly floured surface. Roll to 1/4-inch thickness. Cut into 2 1/2x1 1/2-inch rectangles and place about 1 inch apart on baking sheet. Bake for 10-12 minutes or until no indentation remains when touched. Repeat with remaining dough. Remove from baking sheet; brush with icing and cool on a wire rack.
Icing: combine granulated sugar and water in a small saucepan and heat to 230 degrees. Stir in powdered sugar and brush on Lebkuchen while warm.
