Holiday Butterscotch Crinkles Recipe
2 cups packed brown sugar
1/2 cup reduced fat margarine
1/2 cup shortening
1 teaspoon vanilla
1/2 cup egg substitute
2 1/4 cups all-purpose flour
2 cups oats, toasted until lightly browned
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup granulated or powdered sugar
Heat oven to 350 degrees and spray a baking sheet with nonstick spray. Beat brown sugar, margarine, shortening, vanilla and egg substitute in a large bowl using an electric mixer or spoon until mixed. Stir in flour, oats, baking powder and salt and mix well. Shape dough into 1-inch balls, roll in granulated sugar and place about 1 inch apart on baking sheet. Bake for 10-12 minutes or until no indentation remains when touched. Remove cookies from baking sheet and cool on a wire rack.
