Peachy Bread Pudding Recipe
2 cups cubed French bread (about 1/2 inch cubes)
2 medium peaches, peeled and chopped
1 cup skim milk
1/4 cup fat-free, cholesterol-free egg substitute
1/4 cup peach spreadable fruit or preserves, melted
2 tablespoons packed brown sugar
1/2 teaspoon vanilla
Heat oven to 350 degrees and spray loaf pan (9x5x3 inch) with nonstick cooking spray. Combine bread and peaches in the loaf pan and toss to mix. Beat milk, egg substitute, melted spreadable fruit, brown sugar and vanilla with a wire whisk until blended. Pour evenly over bread and peaches. Place loaf pan in a rectangular baking dish (13x9x2 inches) and fill with 1 inch of boiling water. Bake 30-35 minutes or until an inserted knife comes out clean. Cool for 10 minutes and cut into 4 pieces and serve warm.
