Mini Walnut Cheesecakes Recipe
Crust:
1/3 cup Grape Nuts cereal
3 tablespoons chopped walnuts
2 pitted dates
1/2 teaspoon grated lemon zest
1/8 teaspoon cinnamon
Filling:
1 cup low-fat cottage cheese
4 ounces reduced-fat cream cheese
2 tablespoons sugar
1 large egg white
1 tablespoon cornstarch
1 teaspoon grated lemon zest
1/2 teaspoon vanilla
Glaze:
3 tablespoons sugar
1/3 cup water
2 tablespoons Frangelico or other nut-flavored liqueur
Preheat oven to 300 degrees. Place a 6 muffin pan on a piece of waxed paper and trace the bottoms of the cups. Cut out the round pieces of waxed paper slightly smaller than the traced line (rounds should fit inside the bottom of each muffin cup. Generously spray the muffin pan with nonstick cooking spray and line the bottom with the waxed paper rounds.
Combine all crust ingredients in a food processor or blender and process until crumbly but moist. Divide the crust ingredients evenly among the muffin cups and firmly press into even layers on the bottoms. Place the cottage cheese in a food processor or blender and puree until smooth, scrapping the sides occasionally. Add the remaining filling ingredients and blend until smooth. Spoon filling evenly among the 6 muffin cups.
Place the muffin pan in a larger pan and then fill with hot water. Place cheesecakes in the middle rack of a preheated oven and bake for 20-25 minutes or until firm. Remove from oven and cool cheesecakes on a wire rack then chill covered for at least 2 hours.
While cheesecakes are baking, combine the water and sugar in a small saucepan and bring to boil, stirring frequently. Continue boiling until some of the water evaporates and mixture thickens. Remove from heat and stir in liqueur. Cover and chill.
To serve, run a wet knife around the outside of each cheesecake, then invert onto a baking sheet. Drizzle with nut glaze and serve.
