Sweet Potato Pie Recipe
1 egg white
2 eggs
3 medium sweet potatoes, cooked and peeled
1/4 cup brown sugar
1 (8 ounce) can crushed pineapple, undrained
3/4 cup evaporated skim milk
1 teaspoon vanilla
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 uncooked pie crust (9 inch)
Preheat oven to 425 degrees. Beat egg whites and eggs with wire wisk. Mash sweet potatoes with a potato masher and combine with the egg mixture. Add remaining ingredients and mix well to combine. Pour mixture into pie shell and bake for 10 minutes. Reduce heat to 325 degrees and bake another 45 minutes. A knife inserted in the center of the pie should come out clean when pie is done.
