Streusel Pumpkin Pie Recipe

1 (12 ounce) can evaporated skim milk
3 egg whites
1 (16 ounce) can pumpkin
1/2 cup sugar
1/2 cup all purpose flour
1 1/2 teaspoon pumpkin pie spice
3/4 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons grated orange peel

Topping:
1/4 cup packed brown sugar
1/4 cup quick-cooking oats
1 tablespoon margarine or butter, softened

Heat oven to 350 degrees. Mix all topping ingredients together and set aside. Spray (10x 1 1/2 inch) pie plate with nonstick cooking spray. Place remaining ingredients in blender or food processor, cover and blend until smooth. Pour into pie plate and sprinkle with topping. Bake 50-55 minutes or until an inserted knife comes out clean. Cool 15 minutes and refrigerate at least 4 hours.
