Coffee-Spice Snack Cake Recipe

1 cup honey
1/2 cup strong brewed coffee
1 tablespoon brandy
1/2 cup reduced fat egg substitute
2 tablespoons olive oil
1/2 cup packed brown sugar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves

Combine honey, coffee and brandy and mix well. Beat egg substitute in small bowl then add oil and brown sugar. Combine flour, baking powder, baking soda, salt and spices in a medium bowl and mix well. Add flour mixture and honey mixture, alternately, to egg mixture and mix well. Pour batter into a 9-inch square baking dish sprayed with nonstick cooking spray. Bake at 300 degrees for 55-60 minutes or until an inserted toothpick comes out clean. Slice into 16 pieces.
