Breakfast Loaf Recipe
2 3/4 cups all-purpose flour
1 package rapid rise yeast
1 tablespoon sugar
1 teaspoon salt
1 cup very warm water (120-130 degrees)
1 tablespoon reduced fat margarine
2 tablespoons Dijon mustard
2 tablespoons fat-free mayonnaise
12 ounces sliced, fully cooked lean ham or turkey breast
8 ounces sliced sharp cheddar cheese
Dough: In a large bowl, combine 1 1/2 cups flour, undissolved yeast, sugar and salt. Stir in water and margarine and mix well. Add enough flour to make a soft dough. Knead on lightly floured surface until smooth and elastic (4-6 minutes). Cover and let rise for 10 minutes.
On a lightly floured surface, roll dough into 14 x 10-inch rectangle. Transfer dough to a baking sheet sprayed with nonstick cooking spray. Evenly layer 1/3 ham slices, 1/2 cheese slices and 1/2 half mustard and mayonnaise in the center third of the dough. Repeat layering with remaining ingredients. Make cuts in the dough from the filling to the ends of the dough at 1-inch intervals. Alternating sides, fold dough strips at an angle across filling. Pinch ends of dough to seal. Cover and let rise in a warm place for 30-45 minutes. Bake at 400 degrees for 30-35 minutes or until done. Remove from oven and cool on a wire rack. Slice into 12 pieces and serve.
