Spinach Cheese Loaf Recipe
Filling:
2 eggs lightly beaten
1 cup crumbled feta cheese
1 (10 ounce) package frozen, chopped spinach, thawed and well drained
1 teaspoon dried oregano leaves
1 clove garlic, minced
Dough:
3 cups all-purpose flour
1 package rapid rise yeast
1 tablespoon sugar
1 teaspoon salt
1 cup water
1 tablespoon butter or margarine
1 egg white, lightly beaten
Combine all filling ingredients and set aside. In a large bowl, combine flour, undissolved yeast, sugar and salt. Heat water to very hot, but not boiling. Gradually add water to dry ingredients and beat about 2 minutes with electric mixer. Add 1/2-cup flour and beat for 2 minutes. Stir in additional flour with a spoon until making a soft dough. Knead on lightly floured surface until smooth and elastic, about 4-6 minutes. Roll dough into a 14x10-inch rectangle and place on a greased baking sheet.
Spread filling down center of dough. Make cuts with a knife from filling to edge of dough at 1-inch intervals. Alternating sides, fold strips of dough over filling at an angle (braiding). Cover and let rise for about 15 minutes. Brush dough with egg white and bake at 400 degrees for about 25 minutes. Cool slightly and serve warm with a salad or soup.
