Carrot-Nut Bread Recipe
3 medium carrots, shredded
3/4 cup sugar
1/3 cup vegetable oil
1/4 cup plus 2 tablespoons reduced fat egg substitute
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup coarsely chopped walnuts
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Heat oven to 350 degrees. Spray bottom only of a loaf pan (8.5x4.5x2.5 inches) with nonstick cooking spray. Mix carrots, sugar, oil and egg substitute in large bowl. Stir in remaining ingredients. Pour into pan. Bake 50-60 minutes or until an inserted toothpick comes out clean. Cool 10 minutes. Loosen edges of loaf from pan and remove. Cool on a wire rack before slicing.
