Banana Nut Bread Recipe
1 1/4 cups sugar
1/2 cup butter or margarine
2 eggs
1 1/2 cups mashed ripe bananas
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup walnuts, chopped
Heat oven to 350 degrees. Generously spray two loaf pans with nonstick cooking spray. Mix sugar and margarine in large bowl. Stir in eggs. Add bananas, buttermilk and vanilla and mix until smooth. Stir in flour, baking powder, salt and baking soda just until flour is moistened. Stir in walnuts and pour batter into pans. Bake about 1 hour or until an inserted toothpick comes out clean. Remove from oven, loosen edges of loaf, remove and cool on a wire rack.
