Mandarin Pork Kabobs Recipe
1 pound boneless pork loin, cut into 16 thin strips
1 (11 ounce) can mandarin oranges, drained
1 small green pepper, cut into 1/2 inch chunks
1/4 cup reduced sodium teriyaki sauce
1 tablespoon honey
1 tablespoon vinegar
1/8 teaspoon garlic powder
16 Bamboo skewers, soaked in cold water for 20-30 minutes prior to assembly
Combine teriyaki sauce, honey, vinegar and garlic powder and mix well. Pour over sliced pork strips in a shallow dish and marinate in the refrigerator. Thread pork strips, accordion-style on to skewers, alternating mandarin oranges and green pepper pieces before re-threading pork strips. Remaining marinade can be used during cooking only. Broil for 5-6 minutes, turning and basting frequently.
