Zucchini with Cheese Spread Recipe
1 large green zucchini
1/3 cup fat free cream cheese, softened
1/4 cup red bell pepper, finely chopped
2 tablespoons, fresh parsley, finely chopped
1/4 teaspoon onion powder
1/4 teaspoon dried Italian seasoning
2 drops red pepper sauce
1 green onion with tops, thinly sliced
Partially score zucchini peel with a fork. Slice zucchini into 1/4-inch slices. Mix remaining ingredients except green onion until well blended. Spread 1-2 teaspoons cream cheese mixture onto each slice of zucchini and place on a serving platter. Sprinkle with green onion, cover and refrigerate for 1 hour or until firm.
