Lentil Salsa Recipe

1 pound lentils
3 teaspoons reduced fat margarine
2 cloves minced garlic
1 medium red bell pepper, finely chopped
4 green onions, finely chopped
1 medium tomato, chopped
1/2 cup chopped fresh cilantro
Salt and pepper to taste

Soak lentils in water for 1 hour or until softened. Melt margarine in large nonstick skillet over medium heat. Add garlic, red bell pepper, green onion and saute until onion is tender. Add lentils; season with salt and pepper and saute. Sprinkle with cilantro and serve with bread or pita bread.
